This amazing Organic Tabi is produced by Gabriel Coy and his family in Villa Gabriela Farm, Palestina, Huila. It is a shade grown coffee which means that it has been grown in its natural ecosystem and is less susceptible to harmful climate impacts. Added ecological benefits of this farming method include strengthen the resilience of coffee systems, improve farmers’ livelihoods and the provision of a bird-friendly habitat. The name Tabi means “good” in the Misak language, a language from a Colombian indigenous people from the Cauca Region.

You may have heard about this coffee before. Despite its popularity and renown, Geisha roasts are not commonly found in local coffee shops and cafes in Ireland. It can be difficult to find on the world’s best coffee, produced and processed by these local communities, which we are proud of!

Carefully  picked, only the ripe cherries are harvested, and they are selectively picked by hand. The beans require unique cultivating conditions and only a specific amount of coffee can be grown every year.

They are 20 small farmers and their families who have dedicated their lives to work with coffee and sugar cane, as well as with vegetables and fruit as part of their traditional campesino lifestyle. Their farms are located between 1400 to 1900 masl.

Dry processed (natural) coffees are carefully dried in the full cherry prior to de-pulping. This type tends to have more fruit and fermented flavours because the bean has more time to interact with the natural sugars from the cherry as enzymes break down the mucilage around the bean.

This is another great coffee produced by Gabriel Coy and his family in Villa Gabriela Farm, Palestina, Huila. Caturra is a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil sometime between 1915 and 1918.
